Quinoa was considered by the Incas to be sacred. They referred to quinoa as chisaya mama or "mother of all grains". Quinoa is high in protein, as well as being a good source of calcium, phosphorus, magnesium and iron.
Cooking quinoa is extremely easy and fast. Just combine one cup of quinoa with two cups of water or broth, bring the mixture to a boil, reduce the heat and simmer for 15 to 20 minutes. Fluff it with a fork, and it's delicious and ready to serve as-is or with your choice of seasonings.
Important: Prior to cooking, rinse thoroughly in running water for several minutes in a fine strainer.
